This homemade version of teriyaki chicken has amazing flavor and just the right amount of kick. My husband and I love it, and so do our teenagers.
This recipe makes a (very) filling dinner for four adults.
2 lbs chicken tenderloin, cut into bite-sized pieces
1 ½ cups rice + 3 cups water
12 oz bag frozen broccoli florets
¾ cup soy sauce (low sodium works great)
¾ cup honey
3 Tbps ketchup
¾ tsp garlic powder
¾ tsp black pepper
Start heating the water for the rice, and follow directions according to the package directions.
Cook a little bit of olive oil and the chicken in a large, non-stick skillet over medium heat.
Mix the soy sauce, honey, ketchup, garlic powder and pepper together in a small bowl. Once the chicken is cooked, stir in the sauce and heat on low until bubbly, stirring frequently.
Meanwhile, cook the broccoli in the microwave or on the stovetop. For the microwave, I pour a few tablespoons of water over the desired amount of broccoli in a glass bowl, cover with a damp paper towel, and heat on med high heat for about eight minutes.
At this point, the rice will be done and you are ready to serve!
